The sigree is a traditional Indian charcoal brazier. It's been at the centre of Indian cooking for centuries. Long before gas jets and induction hobs, skilled cooks knew that live fire produced something nothing else could: deep, smoky caramelisation, juicy interiors, and the unmistakable smell of charcoal doing its thing.
Sigree Indian Cuisine was founded because Auckland deserved a restaurant where those techniques were taken seriously. Not as a novelty, but as the actual way the food gets cooked. Our chefs have roots across India, from the tandoor kitchens of Punjab to the coastal seafood traditions of Goa, and that shows in every section of the menu.
