Our Story

The sigree
doesn't lie.

You can't fake what comes off a real sigree. The charcoal heat is dry and direct — it caramelises the surface while keeping the moisture locked in, working with the marinade in a way that an oven or gas flame simply can't. This isn't nostalgia. It's just physics.

Sigree Indian Cuisine opened on Rosebank Road because Auckland deserved an Indian restaurant where the food takes the lead. We cook regionally, season honestly, and trust that guests can tell the difference.

Flame & Time

A proper sigree cook doesn't work by the clock — they go by colour, smell, and instinct built over years. We marinate overnight, wait for the coal to settle, and never pull a rack early because a table is waiting.

India has more regional food traditions than most countries have cuisines. Our menu borrows from the north, the coasts, and everywhere in between — because why limit yourself when the source material is that good?
